Os restaurantes precisam estar orientados para a excelência do serviço ao cliente, já que se trata de fator crítico de sucesso para a lucratividade do negócio. Um ponto importante que influencia na percepção de qualidade do serviço é a interação entre os funcionários e os clientes. Nesse sentido, as práticas de gestão de pessoas podem auxiliar na busca da excelência no atendimento ao cliente. Dessa forma, o objetivo deste estudo é levantar as características da gestão de pessoas de alto desempenho em restaurantes, tendo por base três casos de sucesso.
