Hidrolases digestivas de peixes: aspectos bioquímicos, fisiológicos e biotecnológicos

Resumo


Hidrolases catalisam a hidrólise de ligações covalentes. Extraídas de subprodutos descartados da aquicultura, estas enzimas podem ser usadas por meio de processos tecnológicos para a indústria, com aplicações biomédicas e ambientais, devido à sua especificidade e resultados rápidos. Este trabalho objetivou relacionar as principais características das hidrolases digestivas de peixes com aplicações biotecnológicas visando contribuir para a difusão do conhecimento físico-químico da pepsina, tripsina e quimotripsina.

ABSTRACT

Hydrolases catalyze hydrolysis of covalent bonds. Extracted from aquaculture discarded byproducts, such enzymes can be used through technological processes for industrial, biomedical and environmental applications due to their specificity and quick results. This study aimed to relate the main features of fish digestive hydrolases with biotechnological applications to support dissemination of physicochemical knowledge regarding pepsin, trypsin and chymotrypsin.
