O estudo destaca a relevância econômica e social do setor de panificação, traça o perfil atual dos estabelecimentos e as tendências que se verificam, tecendo considerações sobre a administração estratégica de serviços. Tais considerações norteiam a busca de pistas para uma proposta de modelo para padarias, enquanto negócio, que possibilite seu sucesso em um ambiente de transformações, e aumento de competitividade com empresas locais e, até mesmo, com empresas de classe mundial. Abstract The study focuses the economical and social importance of the bakery’s market, draws the present profile of those business and shows the noticed tendencies, making considerations about the strategic administration of services. Such considerations lead the search to find out signs for model proposal for bakeries business so that it enhonces possibilities to obtain success in a environment of transformations and increasing competitive, including in world-wide companies.
